Orzo with Garlicky Spinach
Ingredients: ¾ cup uncooked orzo, 1 tbsp butter, 4 cups spinach, 2 tsp minced garlic, 1 oz Parmesan cheese, ¼ cup chicken broth, 1 tbsp white balsamic vinegar, ⅜ tsp salt, ¼ tsp crushed red pepper
### Preparation
1. Cook pasta according to package directions, omitting salt and fat.
2. Melt butter over medium heat. Cook for 1 minute or until browned.
3. Add spinach and minced garlic. Cook for 1 minute.
4. Stir in orzo, Parmesan cheese, chicken broth, vinegar, salt, and crushed red pepper.
