Sauteed Collard Greens with Mushrooms
Ingredients: 2 tbsp of cooking oil, 2 bunches of collard greens (8-10 leaves), Baby bella mushrooms, 1 can of diced roma tomatoes, Cooked white rice, Diced garlic, Garlic powder, Onion powder, Smoked paprika, Cayenne pepper (optional for added spice), Salt, Pepper, Optional: nutritional yeast for added Vitamin B12
### Preparation
1. To prepare and slice mushrooms: Rub dirt from the mushrooms under running water. Fill a large bowl with water and salt. Place mushrooms in the large bowl to disinfect. After 3-5 minutes, rinse salt water out of the mushrooms and slice the mushrooms.
2. Wash and cut the stems from collard greens. Roll up the collard greens and slice with ¼-inch cuts.
3. In a pan of medium heat, pour oil and add in the mushrooms and a pinch of salt. Stir for 5 minutes or until brown. Then add chopped garlic. Cook until garlic is lightly browned.
3. Add in collard greens and all the spices (adjust according to preference and/or taste). Mix.
4. Cook the collard greens with mushrooms with lid on for 3 minutes. Then, add in the diced roma tomatoes. 5. Cook for another 3-5 minutes. Add in your cooked white rice and you are done!
6. Optional: sprinkle with nutritional yeast for an even healthier, yummy dish. ENJOY!! :)
