Pear and Pomegranate Salad
Ingredients: ¼ cup pomegranate seeds, 1 pear sliced or chopped per preference, 3 cups packed baby spinach, ¼ cup crumbled feta cheese, ¼ cup pecan halves, Optional: orange poppyseed vinaigrette, ⅓ cup fresh orange juice, ¼ cup extra virgin olive oil, 1 tbsp dijon mustard, 1 tbsp apple cider vinegar, 1 tbsp poppyseeds, 1 tbsp honey
### Preparation
1. For the salad, add the spinach to a large bowl and layer the remaining ingredients on top. Top with desired dressing or use orange poppyseed vinaigrette.
2. Orange poppyseed vinaigrette directions:
* Add all ingredients to a medium sized jar. Tighten the lid and shake until thoroughly mixed. Drizzle over salad. Toss to combine. Serve immediately and enjoy!
### Notes
Vinaigrette is made from:
* ¼ cup extra virgin olive oil
* 1 tbsp dijon mustard
* 1 tbsp apple cider vinegar
* 1 tbsp poppyseeds
* 1 tbsp honey
