Butternut Squash Soup

Ingredients: 2 tbsp butter, 1 medium white or yellow onion, peeled and diced, 1 medium butternut squash, peeled, seeded, and cubed, 1 medium carrot, peeled and chopped, 1 stalk celery, chopped, 2 medium potatoes, cubed, 23 oz vegetable broth or chicken stock, Salt and pepper to taste


### Preparation 1. Melt the butter in a large pot over medium-high heat. Saute chopped onions until lightly browned. 2. Season with salt and pepper. Add in all the chopped vegetables. 3. Pour enough vegetable broth/chicken stock to cover vegetables and bring to boil. 4. Reduce heat to low, cover pot and simmer for 40 minutes. Puree using an immersion blender, or transfer in batches to a food processor or blender. Blend until smooth. Return to pot and mix in any remaining stock to attain desired consistency
